Determination of Antioxidant and Antimicrobial Properties of Homnil Rice Bran Extracted by Organic Solvents

Abstract
The effects of different extracting solvents and their concentrations on the total phenolic content, antioxidant and antibacterial activities of Homnil rice bran extracts were studied. Homnil rice bran was extracted with methanol, ethanol and acetone at different concentration (0-100%), at 60 �C for 1 h. The total phenolic content of Homnil rice bran Extracts (HNE) was analyzed by Folin�Ciocalteaucolorimetry assay and the percentage of antioxidant activities was assessed by DPPH radical scavenging assay. HNE extracted with 60-80% concentrations of all sovents type exhibited the highest total phenolic content along with the highest antioxidant activity. HNE further exhibited the antibacterial properties against food-borne pathogenic bacteria (Bacillus cereus TISTR 687, Staphylococcus aureus TISTR 118, Escherichia coli TISTR 780, Salmonella Typhimurium TISTR 292) investigated by disc diffusion and micro broth dilution assays. The findings of this research demonstrated the potential of the extracts of Homnil rice bran as the antioxidant and antibacterial which could be an alternative for natural food additives to replace the artificial additives.
