Acceptability, Marketability and Physicochemical Analysis of Malicorn Pandesal

Abstract
Pandesal has become a breakfast staple on every table in almost all Filipino homes. It is a substitute for a heavy meal in the morning or it can be served earlier than the regular breakfast. What makes it important and relevant is that it can be consumed regularly by both the rich and the poor or practically by all walks of life. That is of course aside from the nutritional value that one can get from it. Moreover, the concept of this modern Pandesal making has gone through evolution. The industrial revolution and the development of the food industry realized the transition from a traditional handicraft industry to mass production using machinery. There are already innovations associated with bread production. One of these innovative changes is using vegetables and crops in the making Pandesal. With Sweet Corn, Insulin Plant, and Malunggay as ingredients, this does not only promote health benefits but also medicinal profits. This Descriptive study was conducted to thirty (30) consumers, (30) bakers, and (30) bakery owners, all from Barangay Holy Spirit Quezon City through a Simple Random Sampling. Data were collected by a valid and reliable survey questionnaire. Findings show that the acceptability of the proposed Sweet Corn, Insulin Plant, and Malunggay Pandesal in terms of appearance, aroma, color, taste, and texture is described as highly acceptable with a mean average of 8.40. Likewise, the evaluation of the three groups of respondents on the level of marketability of the Malicorn Pandesal with supply availability, production cost, and consumers demand is with very high potential marking a Mean Average of 4.60. It was also noted that there was no significant difference in the evaluation of the three groups of respondents on the level of acceptability and marketability of the Malicorn Pandesal. They have accorded that the Pandesal can pose several benefits including its practicality, health, and medicinal profits.
