Encapsulation of Avocado Oil by Absorption with Native and Swollen Cassava Starch Granules

Abstract
The potential application of cassava starch granules as an avocado oil absorbent was investigated. The microcapsules were basically prepared by incubation of 100 g cassava starch kneaded with 10 g avogado oil, then washing with petroleum ether to remove excess oil and drying to get dried oil powders. Using native cassava starch granule as an absorbent, the oil loading was 0.99 g/ 100 g microcapsules and encapsulation efficiency (EC) was only 11.87 %.In order to improve the ability of native starch to encapsulate/ entrap avogado oil, cassava starch was modified by heating 9 %starch suspensions at 60 ºC for 8 min; subsequently, chilling or freezing was conducted to stabilize the structure of the swollen starch. The EC of dried swollen starch was increased to 17.03%.In addition, freezing of the swollen starch at -18 ºC for 3 h prior to drying could increase the EC to 23.96%.
