Acid Stable Encapsulated Calcium Carbonate usage in Chewing Gum Production

Abstract
This paper presents encapsulated calcium carbonate usage as a bulking agent instead of talc in chewing gum production. CaCO3 has been encapsulated in a polymer for use as an replacer with talc in gum base formulations. A few crucial effects were obtained about sensory characteristics and aroma release profile of chewing gum. Encapsulated calcium carbonate causes increased aroma feeling and long release duration than talc usage according to sensory perception. Secondly, talc was identified as unsafe component by some scientific studies and encapsulated calcium carbonate can be a good alternative for preventing dangerous effects of talc.
